I took another UX course on Coursera, this one offered by California University and my feedback is exactly the same as yours: the evaluation process is simply non reliable. I remember receiving not helpful reviews like "your design is boring". For someone looking to get a trustworthy certification and develop a project good enough to figure as a portfolio piece, I would recommend Udacity's UX Nanodegree.
